
Gluten free pizza base
Our Pancake Preparation is very versatile, and the best proof of that is this Gluten-free Pizza recipe created by Sofia Carvalho, author of the blog “Criar Comer Crescer” .
An easy-to-prepare, crunchy and delicious gluten-free pizza base made in less than 25 minutes, without rising and without kneading, to fill to taste.
Without the 14 main allergens, and therefore without milk, lactose, egg, soy or gluten, and also vegan.
Ingredients (for a small pizza):
For the base:
- 100g Fidu Pancake Preparation
- 100ml of water
- 1/4 teaspoon salt
For the filling:
- 1/3 cup shredded vegetable “cheese”
- 1/4 cup of tomato sauce
- oregano, basil or other Italian spices
- mushrooms, cherry tomatoes, arugula, pineapple, peppers, onions, olives, etc.
Instructions
For the base:
- Start by preheating the oven up and down with ventilation to 220ºC at least 15 minutes beforehand. Place the oven tray upside down in the oven to preheat.
- In a bowl, place 100g of Fidu Pancake Preparation and 100ml of water. Season with salt.
- Mix everything very well and let it rest for 5 minutes. After that time, re-involve. You will notice that the dough is already thicker and also bubbling.
- Place a sheet of parchment paper on top of a cutting board and grease it with a drizzle of olive oil.
- Place the dough on top and spread it out in a circle.
- Transfer the parchment paper with the base, with the help of the cutting board, to the top of the oven tray that is preheated and inside the oven.
- Let it cook for 8 to 10 minutes or until you notice that the base is cooked. If you cook for up to 10 minutes it will be more crispy.
- Remove the parchment paper with the base from the oven, and with the help of the cutting board.
For the stuffing:
- Cover the base with the tomato sauce and season with the herbs.
- Add the vegetable “cheese” and the filling you want.
- Bake for another 5 to 7 minutes or until the cheese has melted.
- Remove and serve immediately.
